I just discovered the “Skinny Chef’s” website today, and I had to share with you. This chef rocks! She’s got a sound philosophy on food that emphasizes balance, variety and moderation. She knows the importance of whole grains, fruits and vegetables, and low-fat cooking. And she’s got loads of unique, healthy recipes to share! I can’t wait to test them out! Here are the first ones I plan to try:
Quinoa-Crusted Chicken Fingers: These chicken fingers are coated in healthy whole-grains, like quinoa, which is also a complete protein. They are stir fried lightly in oil, rather than deep fried. I may also try baking them in the oven!
Butternut Squash Risotto: Normally, risotto is high in fat due to the creamy Mascarpone cheese it’s traditionally made with. This recipe uses butternut squash, which has a creamy consistency without the fat, as a substitute. In the fall, I will probably use fresh butternut squash for this recipe! (Just bake it in the oven for about an hour, then scoop out the insides.)
Fat Free Pina Colada: Nomally, pina coladas are loaded with sugar and fat. This version, however, is fat free, contains no added sugars and is actually a great source of calcium!
